Chocolate Lava Cake (Molten Chocolate Cake)


Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 6 oz (170g) semi-sweet chocolate, chopped
  • 1 cup (120g) powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup (65g) all-purpose flour
  • Butter and cocoa powder (for greasing the ramekins)

Instructions:

  1. Preheat the oven to 425°F (220°C). Grease 4 ramekins (6 oz size) with butter and dust them with cocoa powder, tapping out any excess.

  2. Melt the butter and chocolate: In a medium saucepan over low heat, melt the butter and chopped chocolate, stirring occasionally until smooth. Remove from heat and let it cool slightly.

  3. Mix the batter: In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, vanilla extract, and salt until smooth and well combined.

  4. Combine: Gradually stir the melted chocolate mixture into the egg mixture. Once fully combined, fold in the flour until just incorporated.

  5. Fill the ramekins: Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  6. Bake: Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are set but the center is still slightly soft and jiggly. The top will look firm and slightly cracked.

  7. Serve: Allow the cakes to cool for 1 minute, then run a knife around the edges to loosen. Carefully invert onto plates. You can serve with vanilla ice cream, whipped cream, or fresh berries.
